Banana Chocolate Chip Bread

Ingredients:

  • 1 3/4 cup buckwheat flour
  • 1/3 cup coconut sugar
  • 2 heaping spoons cinnamon
  • 2 heaping spoons baking powder
  • pinch of mineral salt
  • 4 large ripe bananas mashed
  • 1/4 cup dark chocolate chips
  • 1/3 cup coconut oil

Instructions:

  1. In a medium/large mixing bowl, combine the buckwheat flour, sugar, cinnamon, baking powder, and salt. Add the mashed bananas and coconut oil mix to combine. After all the ingredients are combined add the chocolate chips and mix them as well.
  2. Place batter in a lightly greased loaf pan and bake for about 50 minutes or until fork comes out clean. Remove from oven and let it cool down for about 10 minutes and enjoy.

Peanut Butter Banana Toast

Ingredients:

  • Slice of sesame bread (Ezequiel bread)
  • 6 banana slices
  • Peanut Butter Spread
  • Flax seeds
  • Chia seeds
  • Honey

 

Mango+Pear Smoothie Bowl

Ingredients:

  • 1 whole mango
  • 1 whole pear
  • 1/4 cup water
  • Ice
  • 5 blackberries 
  • chia seeds
  • sunflower seeds

Instructions:

  1. Place mango, pear, water and ice in the blender and blend until it becomes a smoothie like texture.
  2. Add the blackberries, chia seeds, and  sunflower seeds as toppings and enjoy!

Chia Seeds Oatmeal

Ingredients:

  • 1 cup almond milk
  • 1/2 cup whole grain oats
  • 1/4 cup chia seeds
  • Blueberries
  • Green apple
  • Dates
  • Cinnamon powder

Instructions:

  1. In a pan add the oats and milk and bring heat to boil then simmer uncovered for 3-5 minutes until thickened stirring occasionally.
  2. Cut 6 slices of the green apple and chop 3 dates.
  3. Once ready place the oatmeal in a bowl, add the green apple, blueberries and dates on top and sprinkle some cinnamon to finish with an extra touch.

Blueberry Chia Jam Yogurt

  • Plain Greek Yogurt
  • Fresh Blueberries
  • Bleberry/Satrawberry Chia Jam
  • Cacao Nibs
  • Chia Seeds

 

Yogurt+Peanut Butter Bowl

  • Plain greek yogurt
  • creamy peanut butter
  • Quinoa, millet+chia granola
  • chia seeds
  • Blueberries
  • Raspberries

Fruit Beauty

Ingredients:

  • 5 strawberries
  • 1/2 banana
  • 3 kiwi slices
  • honey
  • chia seeds

Instructions:

  1. Quarter the strawberries and place them side by side around the plate.
  2. Cut the half banana in slices and place them in the inside circle.
  3. Cut 3 kiwi slices and place them in the center of the place to close the circle.
  4. Drizzle some honey on top of all fruits and sprinkle some chia seeds as well.

 

Blueberry Smoothie Bowl

Ingredients:

  • 1/2 cup frozen Blueberries
  • 4 whole frozen strawberries
  • 1 whole frozen banana
  • 1 cup almond or coconut milk
  • 1 tsp chia seeds

Instructions:

  1. Place all ingredients in the blender with some ice and blend them all together
  2. Pour the smoothie in a bowl, and add some cut strawberries and blueberries as toppings. I sprinkled some extra chia seeds on top of the smoothie bowl as well.

 

Peanut Butter Banana Toast

  • Whole grain slice
  • Peanut Butter
  • Banana
  • Chia seeds
  • Honey
  • Strawberry

Instructions:

  1. Toast a whole grain slice
  2. Spread peanut butter
  3. place the banana on top of the peanut butter
  4. drizzle some honey on top and sprinkle some chia seeds as well
  5. Place some cut strawberries on the side. Enjoy!

Kale Chips

Ingredients:

  • 1 bunch kale
  • 2 Tbsp olive oil
  • 1 pinch salt

Instructions:

  1. Cut the kale in medium size pieces as they will shrink in the oven once baked.
  2. Place the kale on a baking tray and place the tray in the oven at a temp of 350.
  3. Bake the kale for about 15-20 minutes keeping an eye as it bakes quickly so it does not get burned and it should be ready to eat.
